You wont find this varietal in your bottle, but I wanted to show you what a machine harvest looks like. This is an electric comb that you can use to remove olives from its branches.
This high frequency vibrating machine shakes the tree by wrapping around the trunk and shaking it vigorously. The olives fall off and are captured by the nets.
The beautiful olives in your bottles are always hand harvested to protect them from bruising and damage, which protects their unique flavor profile.
Once the trees have been liberated of their fruit, the nets are gathered up and the fruit is collected. Next stop is the frantoio, the olive mill.

After being washed, the machine separates out twigs, stones, leaves and any other impurities so that only olives make it into your bottles.
After being cut up, they are moved into a crusher where an olive paste is created. In the malaxer, the paste is slowly and continuously kneaded.
The Leopard centrifugal extractor not only has an outlet flow for the oil, but also separates the pulp from the pomace. The pomace, pits and vegetation waters are reused as fuel, fertilizer and supplementation for animal feed and biomass.
